With the use of a cutting board, you will not have to worry about scratch marks in the granite. Also, this is a very porous material. Bacteria from your raw food, such as meats, can get into the pores of the granite and then become transferred to other foods - causing everyone to get sick. Also, the juices and oils from the foods that you are cutting can stain the counter. This is why you will want to invest in a large and sturdy cutting board. Go ahead and get two of them, one for the meats and one for everything else. This way, you will never have to worry about cross-contamination or having to stop and wash the cutting board before you can continue to prepare the rest of your meal.
